i made some oatmeal chocolate chip cookies yesterday
& they were daaaaayum good.

i've thoroughly enjoyed all 5 of them that i've eaten in the past two days.

oatmeal chocolate chip cookies with walnuts
{makes about 18 large cookies}
1.5 cups flour
.5 tsp salt
.5 tsp baking powder
2 sticks (8 oz) unsalted butter, softened
1 cup light brown sugar, packed
1 cup granulated sugar
2 large eggs
3 cups oats
1.5 cups chocolate chips
.25 cups chopped walnuts (or as much as you want)
preheat oven to 350 degrees &
line 2 large cookie sheets with parchment paper.
whisk flour, salt, & baking powder together in medium bowl.
in seperate bowl, beat butter until creamy (by hand or mixer). add sugars to mixture & beat until fluffy, about 3 minutes.
beat eggs in, one at a time.
stir dry ingredients into butter/sugar mixture with wooden spoon or large spatula. stir in oats & chocolate chips.
place dough on lined cookie sheets by large spoonfuls (about 2 tbsp each), leaving at least 2 inches between.
bake until cookie edges turn golden brown, 18 - 25 minutes.
slide cookies (on parchment paper) onto cooling rack & let sit for a few minutes...
or eat them immediately.
