Salty & Sweet

i was craving some homemade sweetness,
so i did a little experimenting & this was the final product:

praline-y goop on a pretzel.
insanely simple to make & soooo gooooood.

::recipe::
makes about 30 pretzel pralines
heat 1 stick butter in a pot until completely melted
add 2 tsp vanilla, turn the heat on the stove to low
add 2.5 cups light brown sugar to the mixture
add 1 at a time, stirring in before adding the next
note: my mixture was a little thick so i added a tiny bit of water to the pot (just enough to thin it out a bit. less than 1/4 cup)
add nuts - about a bag's worth/as many as you need to take up most of the gooey sugar coating
i didn't have whole pecans, so i used a mixture of walnuts, unsalted almonds,
& crushed pecans
note: i think i'll toast the raw nuts next time before adding to mixture
still on low heat, mix nuts into the mixture
lay pretzels on parchment paper
the original flavor pretzel crisps sold at costco worked perfectly
scoop spoonfuls of coated nuts & goo onto pretzels
let cool
enjoy!

Kidnap the Santy Clause; Hit him with a stick.

wish i woke up to these this morning!
mmmmmmm...
i saw the hangover last night.
i had it so built up in my mind based on all the rave reviews & peeps saying that they spent the whole 90 minutes or whatever laughing. oh, & of course the token annoying woman in the theatre was sitting behind me, laughing at literally everythingggg.
don't get me wrong, the movie was hilarious & definitely worth seeing. it was just a little different that what i was expecting. i still loved it though & more than likely, i'll buy it when it comes out on dvd. it seems like one of those movies that's even funnier when you watch it for the 2nd or 3rd or 4th time.
there was one part in the very end that made me laugh out loud for like 5 minutes.
hint: it reminded me of jill. HAHA.

feed & walk coco brewski
get ready & go downtown for happy hour with lisa & all her friends

i'd kind of rather just stay in tonight, but it looks like that might not happen for me. oh wellsies.

doing anything fun for the 4th???
i haven't really made any plans yet. gotta get on that i guess.

C is for Cookie

i made some oatmeal chocolate chip cookies yesterday
& they were daaaaayum good.
...mmmmm...
i've thoroughly enjoyed all 5 of them that i've eaten in the past two days.

oatmeal chocolate chip cookies with walnuts
{makes about 18 large cookies}
1.5 cups flour
.5 tsp salt
.5 tsp baking powder
2 sticks (8 oz) unsalted butter, softened
1 cup light brown sugar, packed
1 cup granulated sugar
2 large eggs
3 cups oats
1.5 cups chocolate chips
.25 cups chopped walnuts (or as much as you want)

preheat oven to 350 degrees &
line 2 large cookie sheets with parchment paper.
whisk flour, salt, & baking powder together in medium bowl.
in seperate bowl, beat butter until creamy (by hand or mixer). add sugars to mixture & beat until fluffy, about 3 minutes.
beat eggs in, one at a time.
stir dry ingredients into butter/sugar mixture with wooden spoon or large spatula. stir in oats & chocolate chips.
place dough on lined cookie sheets by large spoonfuls (about 2 tbsp each), leaving at least 2 inches between.
bake until cookie edges turn golden brown, 18 - 25 minutes.
slide cookies (on parchment paper) onto cooling rack & let sit for a few minutes...
or eat them immediately.
they'll be hot, gooey, & delicious!
